Tres Leches Lemon Blueberry Cheesecake Sourdough Bake
Ingredients
6c-ish cut up Lemon Blueberry Cheesecake sourdough bread (if you don't have this any will work and i'll tell you how to add the lemon into the recipe)
5 eggs
1 teaspoon vanilla
1/2 - 1 can sweetened condensed milk (the more the sweeter)
1c evaporated milk
1/2c heavy cream
Pinch of salt
Blueberry Compote
2c frozen blueberries
Juice of 1 lemon
1/2c sugar
Sweetened Condensed Milk Drizzle
1/4c heavy cream
1/4c sweetened condensed milk
NOTE: If you don't have the lemon blueberry cheesecake sourdough bread and you want to add the elements of it to this dish. Add the zest of 1 lemon to 2 tbsp of sugar and lest sit for about 5-10min. Incorporate that into the dry bread pieces before you pour the egg mixture over. If you want to add the cream cheese - mix 4oz cream cheese with 1/2c confectioners sugar and a 1/2 teaspoon vanilla until fully incorporated. Then spoon this over the dry bread after you add the lemon zest.
Directions
Butter a 9x13 baking dish and cut up your sourdough bread in desired sizes. Add to the baking dish evenly. If you don't have the lemon blueberry cheesecake sourdough bread and you want to add the elements follow the NOTE section above.
In a medium to large bowl combine the eggs, vanilla, sweetened condensed milk, evaporated milk, heavy cream, and salt.
Once combined pour over bread making sure to distribute evenly.
At this point you can cover with plastic wrap and stick in the fridge up to 24hrs or cook immediately.
Bake at 350 for 35-45min or until golden brown.
While that is baking we're going to make the blueberry compote. In a sauce pan add the blueberries and cook on medium heat until liquid starts to form. Then add the lemon juice and sugar. Cook down until blueberries are soft and the liquid as thickened up a bit. It will thicken up more as it cools.
Now in a small bowl add the sweetened condensed milk and heavy cream to make the drizzle. Mix together.
Once the bake is done remove it from the oven and add your desired amount of drizzle and blueberry compote over the top.
